Article Abstract:
The gene that codes for mesentericin Y105, a bacteriocin from goat's milk, has been cloned to achieve the production of sufficient amounts of bacteriocin. The increasing use of bacterial compounds as preservatives in the place of chemicals has focused attention on antimicrobial activities of lactic acid bacteria. Bacteriocins are good preservatives since they inhibit species closely related to them. Mesentericin Y105 is a non-lantibiotic bacteriocin that is encoded in a 35kb plasmid from Leuconostoc mesenteroides Y105 and inhibits Listeria monocytogenes.

Article Abstract:
A two-glycine-type leader peptide and a signal peptide have been identified within class II bacteriocin precursors. Mesentericin Y105, the class II anti-Listeria bacteriocin produced by Leuconostoc mesenteroides Y105, has been investigated. Two secretion vectors were constructed to investigated heterologous expression systems able to produce mesentericin Y105 in certain hosts. The production of mesentericin Y105 in Leuconostoc was shown to be enhanced via the dedicated transport system, compared to the general secretion pathway.

Article Abstract:
Research has been conducted on the Listeria monocytogenes sensitivity to the bacteriocin mesentericin Y105. The involvement of the sigma (super)54 -associated activator and sigma (super)54 -dependent PTS permease of the mannose family in the sensitivity to mesentericin Y105 has been investigated and the results are reported.
