Phosphoglucomutase is not needed in lactose-utilizing Streptococcus thermophilus because the bacterium uses the galactose moiety of lactose to generate exopolysaccharides (EPS). This indicates that the bacterium uses the Leloir enzymes for EPS synthesis.

Lactococcus lactis appears to have a different metabolic pathway for trehalose than for maltose. This was the conclusion of researchers who analyzed catabolism and anabolism in a beta-phosphoglucomutase mutant.

Altered levels of enzymes in the central carbon metabolism in Streptococcus thermophilus increased the expopolysaccharide (EPS) production 3.3 times over that of the parent strain. The influence of the enhanced EPS production on the rheological properties of fermented milk is described for engineered strains of Streptococcus thermophilus that produce different levels of EPSs.
