Research has been conducted on lactic acid bacteria and gram-positive catalase-positive cocci from low-acid fermented sausages. The authors have investigated microbial hygienic quality of these sausages, and have identified the main bacterial species of technological interest via the use of species-specific techniques.

Research has been conducted on enantioselective 2-octyl sulfate produced via the stereo- and enantioselective hydrolysis of sec-alkyl sulfate by alkyl sulfatase. The effect of these enzymes on stereogenic center inversion on sec-carbon atom during catalysis has been investigated, and the results are reported.
